This is such an easy and tasty dish. A staple recipe in our house. Best if you use left-over rice because the slightly dried out rice sautes better and absorbs the flavors better.
The 3 key ingredients to this dish (beyond rice) is: bacon sausage, ginger, and garlic. If you have those ingredients plus the rice you are good to go. You can use any veggies you might have, it doesn't need to be carrots and peas. You can add fresh herbs (I prefer cilantro or chives). Eggs are super nice, but not necessary. Bean sprouts are a great edition. Peppers of any kind (spicy or mild) add a great deal of color and flavor. Mix it up and have fun with it.

When I think of easy comfort food, my mind often thinks of fried rice. It's so easy to make and yet so tasty, it's a true staple in our house.
Think about it...doesn't anyone NOT like fried rice? And when you use bacon sausage, it's AMAZING!
2 links Big Fork Bacon Sausage (any flavor), quartered, then thinly sliced
2 cloves garlic, chopped
3 tsp. fresh ginger, chopped
1 cup carrots, diced
1 cup frozen peas
3 cups cooked rice
2 Tbsp. Soy Sauce
2 eggs scrambled
1/2 cup red onion, diced
Directions
In a large skillet, over medium heat, sauté the Bacon Sausage until it begins to brown, approximately 5 minutes.
Add the garlic, ginger, and carrots; cook over medium heat for 5 minutes.
Add the peas and rice; cook for an additional 2 minutes.
Add the soy sauce and cook for 1 minute. Remove from heat.
Add the eggs and red onion, mix well, then serve.
Recipe Note
Add any vegetables you might think might work. And add a little fresh herbs over the top is really nice. If you like it spicy, it's easy to add a little sriracha or sambal oelek over the top.
