Asparagus, Lemon, & Bacon Sausage

Servings: 6 – 8
1 tablespoon extra virgin olive oil
2 links Big Fork Bacon Sausage, quartered lengthwise, then sliced thin
½ medium onion, diced
3 cups chopped asparagus
1 cup oat groats, cooked and drained
1 cup cherry tomatoes, sliced
½ lemon juiced and zested
½ teaspoon kosher salt
Directions:

In a large skillet, heat the oil over medium heat. When the pan is hot, add the sausage and onions and cook over medium heat stirring occasionally for 10 minutes.

Add the asparagus and cook for 5 minutes.

Add the oat groats and cook for 1 minute.

Remove from heat. Add the remaining ingredients and serve warm.
