If you are worried about the spiciness of the jalapenos, you can use these more mild chili peppers (from most mild to spicy):
bell peppers
banana peppers
shishito peppers
cubanelle
anaheim
poblano
casecabel
You can also char off the jalapenos over an open flame like over a natural gas stove and that will also mellow out the spiciness as well as add more complexity to your poppers from a flavor perspective.

We would like to thank our neighbor Michael Thanasouras, who was the person who first used our bacon sausage in a jalapeno popper. We have tried our best to create the best tasting jalapeno popper ever, and it sure helps when you use smoky savory bacon sausage.
10 – 12 jalapenos, sliced in half, seeds removed, deveined
½ cup grated parmesan cheese
salt and pepper, sprinkled over the top
Directions
Preheat oven to 500F.
In a mixing bowl combine cream cheese with the sausage, lime zest, and lime juice until fully mixed.
Spread a thick layer of cream cheese mixture over the inside of the jalapenos. Sprinkle over the top with parmesan cheese, salt, and pepper.
Bake in the oven for 10 minutes on a parchment lined baking sheet. Let rest for 3 – 5 minutes before serving. Serve warm.

Pro Tip: You can do steps 1 – 3 in advanced and freeze the poppers so you have them ready at a moments notice. Just thaw to room temperature before moving to step 4.
You can also bake them off completely, let them cool then freeze them if you want to just re-heat them as needed.
I like to garnish with a little fresh chopped cilantro.
